Bank statements should only include bank accounts having enough funds, they can be up to six-month-old active statements stamped by the banks.
Proof of your profession if you are an employee will be either a Job NOC letter / three month pay slips with NTN tax return for employees and for businessmen, it would be Business registration certificate / NTN certification.

Although the application can be sent to Luxembourg embassy, they actually do not have visa issue centre of their own in Pakistan, instead all official work should do in Embassy of Belgium:

• Online Form: you must have a digitally filled out and printed copy of the Schengen visa from VisaOnWeb.
• Appointment Booking: Visit the below link and book your appointment at VFS Global Pakistan through their portal - (VOW System) 
• Submission & Biometrics: Visit the VFS center of your choice in Islamabad, Lahore, or Karachi for physical document submission, biometrics capture, and payment of visa/service fees. 
• Processing & Collection: Process is completed within 15 to 21 working days.
